We celebrate the start of reading....
...with a very delicious grape tart. The idea came from our daughter Sophie and so the girls transformed grandma's traditional apple pie recipe into a grape tart in no time. Quickly fetched a few St. Laurent grapes from the vineyard and off to the kitchen - with the best baking assistants in the world: Sophie & Maximilian 😉 Then there were many thumbs up 👍 from the assembled team.
Grape tart à la JORDAN
Ingredients
Shortcrust
500 g plain wheat flour
½ pkg. cream of tartar baking powder
150 g ridge sugar
1 pkg. vanilla sugar
250 g soft butter
2 eggs
Fullness
500g red grapes de-stemmed
100g grated almonds
100 g ridge sugar
1.5 tsp cinnamon
Coat
1 yolk
Preparation
Shortcrust
Mix flour with baking powder and sift into a mixing bowl. Add the remaining ingredients in order and knead into a dough. Wrap in plastic wrap and chill for about 1/2 hour. Divide the dough in half. Roll out 1 half of dough between 2 sheets of baking paper and place in buttered tart pan. Prick several times with a fork.
Fullness
Mix the grapes with the remaining ingredients and spread on the dough. Not too high
Roll out the second half of the dough between 2 sheets of baking paper, cut out a grape with small circles and carefully place it on the filling. Decorate the edge with a fork, brush with yolk and place in the oven. Place the tray in the middle of the preheated oven.
Hot air: 180°C
Baking time: about 35 minutes
Allow to cool for at least 2 hours.
The grape tart makes a wonderful accompaniment to the fine barrel-aged Jordan grape marc spirit or an enjoyable glass of St. Laurent Reserve.
